---- Broccoli Salad

Serves

4 to 5

Ingredients

1-2 bunches of uncooked broccoli
3-5 strips bacon, cooked & crumbled
2 TBS sunflower seeds
2 TBS red onion, chopped
Optional: raisins or dried cranberries
Dressing: 1/2 cup mayo 1/8 cup sugar 2 TBS cider vinegar

Preparation

Combine ingredients, add dressing. Taste best when refrigerated overnight.

Comments

Serve as side dish or main dish in summer.

---- Chop Salad

Serves

4 to 5

Ingredients

1 can chick peas 2 TBS capers 1/4 cup green peas (I use frozen)
1/2 cup sliced carrots
Small cheese chunks ( I use sharp provolone)
Small meat chunks ( I use genoa salami)
2 TBS shopped red onion
1 stalk celery chopped
1/2 cup chooped roasted red pepper
Add any other raw veggie you like!!!!!!
All measures are approximate, use as much or as little as you like.

Preparation

Toss all ingredients with red wine vinaigrette dressing. Salt and pepper to taste.

Comments

Great summer salad as main dish. Travels well to picnics.

---- Mango and Avocado Salsa ----

 

Serves

4-6 people as a salad / side dish, more as a dip

Ingredients

2 Mangos
2 Avocados
2 Limes
1 Sweet Onion
1 Tsp Crushed Red Pepper
2 Tbsp of Fresh Cilantro
1 Tsp Salt

Preparation

Peel mangoes and cut into ½” chunks and place in medium mixing bowl. Peel and dice the onion and add to the bowl. Remove the avocados from their shell and remove the pits. Dice the avocados into ½” chunks and add them to the bowl. Juice the two limes and pour over the avocados, mangos and onion in the bowl. Toss the ingredients in the lime juice making sure the avocado gets coated in the lime juice to prevent browning. Next add the crushed red pepper, salt and fresh, chopped cilantro. Mix everything together and serve.

Comments

1. This goes great with the Jamaican Jerk Ribs and Dirty Spiced Rice.
2. If you want to make this ahead of time add everything but the avocados and refrigerate until you are ready to serve. Add the avocados and mix together just prior to serving.
